Dad's Apple Cake

My dad makes the best apple cake ever. When I was a kid, we used to pick loads of apples somewhere, and he'd make a whole bunch of cakes and pile them up in the freezer. As the autumn dragged on and the air started to freeze, he would fetch one from the basement and heat it in the oven. Protected from the wind and cold November night we would enjoy yet another warm piece. Those were the days! :)

Pieces: 6-8
Time: Preparation 30 minutes. Oven: 50 minutes

Ingredients

2 dl wheat flour
2 dl sugar
2 eggs
1 tablespoon baking powder
250 grams melted butter
cinnamon
rum essence or flavour
12 small or equal mass of apples

Method

  1. Turn on your oven to 175-200 degrees Celsius (adjust according to the heat of your oven)
  2. Cut the apples into boats and remove the pip
  3. Melt the butter
  4. Mix the flour, sugar and baking powder. Continue with the eggs and the melted butter. You want a quite thick dough, but still so fluid that you can pour it.
  5. Now oil or grease a cake mould and spread the apples evenly in it. Sift the cinnamon over the apples, so every piece get some. And add some drops of rum essence evenly over, maybe a tea spoon or two alltogether.
  6. Finally pour the dough over the apples. It will not cover them completely (This is where a picture will help. Please be patient :), since you should have put down very many apples, but trust me, it will be nice. After all, it is an apple cake, right! :)
  7. Leave in the oven for 50 minutes. Adjust according to the heat of your oven.
